Strawberry Pasta Salad

At work, we have a great tradition. Each month we have one day where we all bring food to celebrate the birthdays for that month. We have so many good cooks and there are always new recipes to exchange. The month of May was no exception and there was one dish that was a real surprise, strawberry pasta salad. This dish is cool and refreshing on a hot summer day.



Just a few ingredients:

A box of shell pasta, a carton of strawberries, one cucumber, and poppy seed dressing.

Boil the pasta, drain and cool.
In the meantime:

Chop the cucumber into small pieces.
Cut the strawberries into small pieces.
After the pasta is cool combine all ingredients and mix with the poppy seed dressing. I found several kinds of poppy seed dressing at the store however, I choose the dressing that was white. I think the white looks prettier with the strawberries.

 
This would be a great addition to a Fourth of July party with the white and red.
